Plain Prata ($1) and Egg Prata ($1.50) from Mr and Mrs Mohgan's Super Crispy Prata.
Search for best prata places in Singapore and Mr & Mrs Moghan's will definitely come up as one of the results. Located at Tin Yeang Restaurant beside Dunman Food Centre, this husband and wife team has been serving pratas since 2006. When I arrived at 6am, my order was queued at 8, but thankfully the digital dashboard displayed my number pretty soon after. I was intrigued at how good their pratas are, after seeing countless reviews on them.
Plain: 7.5/10. A pretty compact prata that had very good layers within to keep it fluffy, its exterior also had a nice char for that crisp to give a good contrast in textures. It was also not very greasy, with just enough to provide a good flavour. It was relatively light to eat compared to what you would expect.
Egg: 8.5/10. This was one of the better egg pratas I have eaten, with a nice crisp exterior accompanied by a wonderfully fluffy interior. The egg formed a crispy area that was satisfying, and also evenly distributed throughout. The slightly charred exterior gave every bite a crunch, and was surprisingly not greasy.
Curry: 7.5/10. Their curry was served warm which I appreciated, but did not have that strong an aroma. The flavours were good, being on the tangy and sour side that paired well with the pratas. I preferred a bit more heat, but then again not everyone would enjoy the spice that early in the morning. It also had a good consistency that can be used for dunking or pouring, depending on your eating preferences
Overall: 7.8/10. The hype of this prata place was certainly not misplaced, and I enjoyed what I had during my visit. I was there very early and only had to wait for them to make my prata fresh, I cannot imagine having to wait hours for your order. Staying reasonably priced, they kept their word on super crispy pratas that were also fluffy, and I would definitely go back again.
