Plain Prata ($1.20) and Egg Prata ($1.80) from Chindamani Indian Restaurant Pte Ltd.
There have been many great reviews about Chindamani Indian Restaurant and their cripsy pratas, and their success is evident from them opening a few outlets across Singapore. To ensure quality, they make their own prata dough and keep them in plastic boxes, ready to feed their hungry customers, and I would be their first customer early one morning.
Plain: 6.5/10. This plain prata came bigger than the egg prata, because of the way it was folded. This unique rectangular shape made the prata very thin and crispy, almost like a cracker. As such, it did not have any fluff as how a plain prata would typically be squashed by the maker as a finishing touch. I personally preferred the layers and fluffy texture in my prata, but this still tasted pretty good, with an adequate amount of grease.
Egg: 7.5/10. Having a more layered texture compared to the plain prata, this also had a reasonably crisp outer layer, though it could have had a bit more char for an added bitter taste. The inside could have a fluffier texture, but it had a good and even distribution of the egg.
Curry: 7/10. Their fish curry was bubbling away in a huge pot, ready to serve customers for the day. Decent flavours from the spices made it quite aromatic, though I preferred more heat and tanginess. The consistency was a little thick, with some chunks and bits coming from the ingredients, making it less fluid
Overall: 7/10. I can see and taste why this is such a popular spot for pratas, and having outlets with consistent standards across Singapore lets you choose whichever location is the most convenient for you. This would work as a good option to satisfy prata cravings in general, but for those who like crispy pratas, this should be on your bucket list.
